I was requested to post some recipes. It is not that I am an expert cook or anything like that, but I like giving tea parties and baking. My sweet turns out better than my meals so I must be doing something right. I am going to post recipes of those that I like. Today I made Portuguese Custard Tarts and it turns out really well so, I will share the recipe with you.
Portuguese Custard Tarts
3 sheets frozen puff pastry
2 tablespoons custard powder
2 tablespoons caster sugar
400ml cream
Finely grated zest of 1 orange
1 teaspoons vanilla essence
Icing sugar, to dust
1. Preheat oven to 220'c/200'c fanforced. Cut each pastry sheet into 4 x 10cm circles to line a 1/2 cup capacity muffin pan. Refrigerate.
2. Stir together custard powder, sugar and 1/2 cup cream until smooth. Stir in zest and vanilla. Bring remaining cream to the boil in a small saucepan. Stir into custard. Return mixture to pan. Stir over low heat for 2 minutes until thickened. Cool for 5 minutes. Pure into prepared cases.
3. Bake on middle over shelf for 15 minutes or until pastry is cooked. Cool and dust with icing.

Its easy peesee and it's good for quick desert or if friends drop by for tea. You are going have some later on today!!!
