Australia Day Biscuits


As Australia Day weekend is approaching I thought I would give you my adapted Australia day biscuit recipe for you to try out.

Australia Day Biscuits

1 cup rolled oats
1 cup plain flour
1 cup brown sugar
1/2 cup coconut
1/2 teaspoon salt
125g butter
2 tablespoons honey
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water.
Combine oats, shifted flour, brown sugar, coconut and salt and put it aside.
Put butter and honey in microwave able mixing bowl and microwave for 1 minute on high.
Mix soda with boiling water and add to melted butter mixture and stir well and then add to
the dry ingredients. Take teaspoonfuls of mixture and place on lightly greased oven trays.
Bake in slow oven temp. 160'c for 20 minutes.

This is my favourite recipe and the biscuits can be kept for up to a week in the airtight container. Enjoy and have a nice and safe Australia Day weekend.

Natima do you have any holiday tips, I am travelling to Bangkok with friends in March for a 4 day stop over, what are the best places to go (shopping).

Think of me when you bake. We are off to see Isabella this weekend. I am taking some of the biscuits for them too.
