STRAWBERRY FRIANDS

It is time for another recipe or two...! Sorry for a quick snap of the photo. I have no time to waste for photos. If I do they wouldn't be anything left for the photos!!! My family love the freshly bake cookies and cakes. I must say, this is my first time trying out the friands. I love them and have paid about $5.00 each them, but now I know how to make it and it is very easy too. I would share the recipe here with you. Enjoy and please leave me a feedback if you are making some. Of course I would take some in to share with my work colleagues tomorrow, while they are still nice and fresh.........!!!

STRAWBERRY FRIANDS

75 g. plain flour
200 g. icing sugar
125 g. ground almonds
50 g. desiccated coconut
grated rind of 1 lemon (optional)
5 egg whites
175 g. unsalted butter, melted
125 g. strawberries
50 g. caster sugar

Cut strawberries into quarter, sprinkle with caster sugar and leave it aside.
Shift the flour and icing sugar into a mixing bowl and stir in the ground almonds, coconut and lemon rind.
Whisk the egg whites in a large clean bowl until frothy then fold into the dry ingredients. Add the melted butter and stir until evenly combined.
Spoon the mixture into lightly oiled friand tray (or muffin tray). Top each friand with strawberry. Bake in a preheated oven, 200'C (400'F), Gas Mark 6, for 18-20 minutes. Leave to cool in the tray for 5 minutes then turn out on to a wire rack to cool completely.

Hey Ingrid, glad you like friands too. It's my favorite and this is the first time I made them myself. I must say it turned out better than I thought. xoxo
